The new restaurant on Passaic Avenue is comfortable, with a few tables and chairs scattered in a spacious room. Near the front window, a map reveals the different street foods of Taiwan, including fried chicken cutlets, stinky (fermented) tofu, and the familiar bubble tea. A green, light-up robot Godzilla stands ready to pounce on top of the drink refrigerator.

Taiwanese cuisine reflects the melting-pot history of the island nation, beginning with European settlers in the 1500s and the following colonization of Taiwan by China and Japan. In addition, neighboring countries like the Philippines, North and South Korea and Vietnam have all added their own ingredients and spices to the Taiwanese gastronomical mix.
